2 C. butter unsalted and room temperature
2 C. sugar
2 C. brown sugar
4 eggs
2 tsp. pure vanilla
4 C. flour
5 C. oatmeal
1 tsp. salt
2 tsp. baking soda
2 tsp. baking powder
8 oz. milk chocolate
24 oz. large semi-sweet chocolate chunks or morsels
3 C. chopped pecans (optional)
This recipe can be easily cut in half.

Cream together sugars and butter until fluffy. Add the vanilla and eggs and beat well. Measure oatmeal then pulverize in a blender or food processor until it resembles flour. Mix dry ingredients with the 4 cups of flour, salt, baking powder and baking soda. Mix dry ingredients with the creamed ones. Add chocolates and nuts if using. Roll into golf ball size balls and bake at 350º for 12-15 minutes until just turning brown. Take from oven and let set on baking sheet for a few minutes more then transfer to wire racks. What also works very well with this recipe is to form into balls, place on a cookie sheet and freeze. When frozen, transfer to a freezer bag or container and keep frozen until you need just a few warm cookies for unexpected guests. Bake right from the freezer for 15-18 minutes. This recipe makes about 6 dozen large cookies.
