1-1/2 cups reduced sodium chicken broth (or vegetable broth)
3/4 cup long-grain white rice
2 tsp grated lemon rind
1 T finely chopped fresh mint
salt and pepper

Directions:
Directions:
In a medium saucepan, bring the broth to a boil. Stir in the rice and lemon rind. Reduce the heat to low, cover and simmer for about 25 minutes, or until rice is tender and liquid is absorbed. Stir in the mint. Season to taste with the salt and pepper.
