1 cup whole wheat flour
3/4 cup all-purpose flour
1 cup wheat bran
1-1/2 tsp baking powder
1/2 tsp baking soda
1/2 cinnamon
1/4 tsp salt
2 eggs
2/3 cup packed light brown sugar
1 cup mashed bananas ( about 2 medium)
1 cup buttermilk (see index for substitutions)
1/4 cup canola oil
1-1/2 tsp vanilla
1/2 cup mini chocolate chips (optional)
1 cup granola (low-fat can be used)

Directions:

Preheat oven to 400º and grease 12 standard muffin cups.

In a large bowl whisk together the dry ingredients. In a medium bowl whisk together the wet ingredients. Add the wet mixture to the dry mixture and stir just until blended. Use a spatula to fold in the chocolate chips, if using.

Divide the batter among the muffin cups and sprinkle the tops with granola. Bake for 15 minutes or until toothpick inserted in center comes out clean. Let them cool in pan 5-10 minutes before removing (or eating) them.

Yields: 1 dozen
