1 1/2 c. sugar
1/2 c. cake flour
3 lemons, juice and rind
3 egg yolks
5 Tblsp. melted oleo
1 1/3 c. sweet milk
3 egg whites, beaten to a wet peak
10" unbaked pie shell

Directions:
Directions:
1. Sift sugar and flour 3 times.
2. Add lemon juice and rind and mix well.
3. Add egg yolks, one at a time and oleo
4. When incorporated well, add milk and mix well
5. Fold in egg whites - don't overmix!
6. Pour in 10" unbaked pie shell
7. Bake 10 min @ 360º, then reduce temp to 310º for 30 minutes.
8. To be sure it's baked well, insert a toothpick in the center of the pie
