1-1/2 cups all-purpose flour
3/4 tsp salt
1 tsp baking soda
1 cup shortening
1-1/2 cups sugar
2 eggs, beaten
1/2 cup buttermilk
1-1/2 cups finely chopped, unpeeled apples
1/2 sugar
1 tsp cinnamon

Grease twenty-four 2-/2-inch muffin-cups well, set aside. In a medium bowl, stir flour, salt and baking soda, set aside.

In a large bowl beat shortening with an electric mixer, 30 seconds. Gradually add the sugar, about 1/4 at a time on med. speed. Beat 2 minutes more. Add eggs, 1 at a time.Alternately add dry mixture and buttermilk to shortening mixture, beating on low speed, just until combined. Fold in apples.

Spoon batter into prepared muffin cups, filling 2/3's full. Bake in 350º for 18-20 minutes or until dark, golden brown and wooden toothpick in the center comes out clean. They will dip in the middle (fall). Cool in pan on wire rack for 15 minutes.

In a small bowl, combine the 1/2 cup sugar and cinnamon. Carefully remove muffins from muffin cups (they will be tender). While warm roll in sugar mixture. Serve while warm.

Makes: 24 doughnut/muffins
