About 6 oz. (1 1/3 cups) salted macadamia nuts
1 cup butter
1 1/4 cups sugar
1 tsp. vanilla
2 1/2 cups all purpose flour
1 tsp. baking soda
1 egg

Chop 1 cup of the nuts: set nuts aside.
With an electric mixer, beat butter and 1 cup sugar until fluffy.
Add egg and vanilla and beat until well combined.

In another bowl, stir together flour, baking soda and chopped nuts. ADD to butter mixture and stir together, then beat to blend. Shape dough into 2 tsp-size balls. Place balls 1 inch apart on ungreased 12 x 15 cookie sheet. With a flat bottom glass( at least 2' diameter) dipped in remaining sugar, press balls 1/4 inch thick. Press a whole nut or chunk of nut into center of each cookie. Bake at 350 until cookies are golden brown, about 12 minutes. Transfer to racks until cool. Store in airtight container up to 5 days. Freeze to store longer.
