1-1/2 cups all- purpose flour
3/4 cup whole-wheat flour
1/2 cup brown sugar, firmly packed
2-1/2 tsp baking powder
1 tsp cinnamon
1/2 tsp baking soda
1/2 tsp nutmeg
1/4 tsp salt
1 cup shredded carrots
3/4 cup chopped walnuts
3/4 cup milk
1 large egg
1/4 cup (1/8 lb) butter or margarine, melted

Directions:
Directions:
In a large bowl, mix flours, sugar, baking powder, cinnamon, soda, nutmeg and salt. Stir in carrots and nuts. Push mixture up sides to form a well in center. In a small bowl, combine milk, egg and butter, beat to blend. Pour liquid ingredients into well of flour mixture, mixing lightly to blend, batter will be lumpy.

Spoon mixture equally into greased muffin cups or use paper muffin liners. Bake at 375º test with toothpick for doneness. About 15-25 min. depending on oven & size of muffin tin.
