1 cup butter
1 1/2 cup sugar
2 eggs
2 3/4 cup all purpose flour
2 tsp cream of tartar
1 tsp soda
1/2 tsp salt

Coating:
2 tbsp sugar
1 1/2 tsp ground cinnamon (or to taste)

Preheat oven to 375º. Line two baking sheets with parchment paper, or grease lightly.
1. Cream together sugar and butter until fluffy. Add eggs one at a time, beating well after each addition and scraping down sides of bowl.
2. Sift together flour, cream of tartar, baking soda and salt. Add about 1 cup at a time to butter / sugar /egg mixture, mixing well after each addition. Chill dough in two portions for at least one hour.
3. Mix sugar and cinnamon coating in a small pan or a plastic bag. Form dough into 1 inch balls, and roll in coating mix.
4. Place balls on cookie sheets at least 1 1/2 inches apart. Use a flat bottom glass to flatten to about 3/8 inch thick and 1 1/2 inch in diameter.
5. Bake for 8 minutes (soft) to 10 (crisper) minutes. Leave on the baking sheets until firm enough to transfer to wire racks to cool.
