1/2 cup butter
1/2 cup granulated sugar
1/3 cup brown sugar
1/3 cup Dutch process cocoa
1/2 tsp salt
1/4 tsp baking soda
1/2 tsp baking powder
1 tsp vanilla extract
1 large egg
2 tbsp milk (optional, if adding chips/nuts/fruit)
1 cup, plus 2 tbsp all purpose flour
1 tsp espresso powder
2 cups chips, nuts, and/or dried fruit; optional but good

Directions:
Directions:
1. Preheat oven to 375º. Lightly grease two baking sheets, or line with parchment.
2. Beat together butter, sugars, cocoa powder, salt, baking soda, baking powder and vanilla until well blended.
3. Add the egg, beating until smooth. Scrape down the sides of the bowl, and beat again until smooth. If adding chips, nuts or dried fruit, beat in the 2 tbsp milk; if making plain cookies omit the milk.
4. Add the flour and espresso powder, mixing to combine. Stir in chips, nuts, etc. if using them.
5. Drop cookies by rounded tablespoon or one tablespoon cookie scoop onto the prepared baking sheets. Space about 2 inches apart.
6. Bake cookies for 12 - 14 minutes, until they lose their shiny appearance and look like they are set. Remove from oven and cool on the pans, or transfer to a rack to cool.
