1 cup margarine or butter, softened
1 cup sugar
½ cup brown sugar, packed
1 large egg
2 tablespoons mild molasses
1 teaspoon vanilla
1½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon allspice
1½ cups quick-cooking rolled oats (not instant)
1 cup medium unsweetened coconut

Directions:

Cream margarine and both sugars in a large bowl. Add egg. Beat well. Add molasses and vanilla. Beat until smooth. Combine next 6 ingredients in a small bowl. Add to margarine mixture in 2 additions, mixing well after each addition. Add rolled oats and coconut. Mix well. Drop, using 1 tablespoon for each, about two inches apart onto parchment lined baking sheet. Flatten slightly. Bake in 300° oven for about 12 minutes until golden. Let stand on cookie sheet for 5 minutes before removing to wire rack to cool.
