1/2 cup oil, divided
1 onion, finely chopped
3 garlic cloves
2 lbs raw shrimp
1/2 red onion, thinly sliced
1/2 cup white wine vinegar
1 tsp salt
1/4 tsp pepper
1/4 tsp mustard powder
1 whole chili pepper (Arbols are mild, jalapenos spicier)

One day ahead, heat 1/4 cup oil in a large skillet over medium heat. Add the chopped onions and cook until translucent, 3-5 minutes. Add the garlic and stir. Add the shrimp and cook just until pink, 3-5 minutes.

In a ziplock bag, combine remaining 1/4 oil, red onion, vinegar, salt, pepper and mustard. Add the shrimp/onion mixture and chili pepper (if desired). Toss to coat well, then refrigerate 8-24 hrs.

Not actually pickled, these shrimp have a nice tangy flavor. Great with or without the chili peppers. I still serve these with cocktail sauce, but they don't need it.
