3-4 lb. chuck roast
1 tsp. olive oil
1 tsp. Kosher salt
1/4 tsp. black pepper
1 cup dry red wine
4 sprigs fresh thyme
3 cloves garlic, chopped
Beef broth, to cover
1 bay leaf
4 large carrots

Directions:
Directions:
Heat oil. Sprinkle salt and pepper on the roast. Brown the roast in the oil. Remove the roast and brown the onions. Return the roast the pan/dutch oven. Add the other ingredients except vegetables. Cover and roast at 350º for 1 1/2 hours or until tender. Add vegetables, cover and cook for an additional hour.
