1 tbsp peanut or vegetable oil
1/4 pd snow peas, thinly sliced
1 large celery stalk, diced
1 large carrot, coarsely chopped
1 large shallot or onion, finely chopped or thinly sliced
2 tsp grated fresh ginger or 1/2 tsp ground ginger
1/4 tsp crushed red pepper ( I use a couple of shakes of hot sauce)
2 1/2 cp cold cooked rice
3 tbsp reduced sodium soy sauce
1 tbsp rice vinegar
1 tsp sugar
1/3 cp sliced scallion, green part only

1. Heat a large nonstick skillet over high heat; swirl in the oil and add the snow peas, celery, carrot, shallot, ginger and red pepper. Stir fry 2 minutes; add the rice, stirring well to remove any clumps and stir fry until hot, 3-4 minutes.
2, Combine the soy sauce, vinegar, and sugar in a small bowl. Sprinkle over the rice, along with the scallion, and stir fry just to heat through, 2 minutes more. Serve immediately.
