1 lb chicken breasts, cooked and diced
1 medium onion, chopped
1 T vegetable oil
8 flour tortillas
1 pkg shredded Monterey jack cheese
1/4 cup butter
1/4 cup flour
2 cups chicken broth
1 cup sour cream
1 can green chili enchilada sauce

Directions:
Directions:
Cook chicken and onions in oil over medium heat for 2 to 3 minutes. Divide chicken mixture between 8 tortillas; add 1 1/2 T cheese to each tortilla. Roll the tortillas and place seem side down in a 9 x 13 pan that ha been lightly sprayed with a no-stick cooking spray.

Melt butter in a med sauce pan. Stir in flour to make a roux. Stir and cook until bubbly; gradually whisk in chicken broth then bring to boil, stirring frequently. Remove from heat and stir in sour cream and then green chili enchilada sauce. Pour over tortillas and sprinkle remaining cheese over the sauce. Bake at 400º for 20 minutes.
