Directions:
Coat 9 x 13 pan with cooking spray. Pack in bread slices in a single layer (really squeeze them in- should be able to fit whole, or almost whole loaf in pan). Beat together eggs, 1/2 cup sugar, milk and vanilla. Pour mixture over bread. Peel apple and slice very thin. Place slices over bread. Mix remaining sugar and cinnamon, sprinkle over apples & top of casserole (I never use the whole mixture, to taste). Dot with butter. Make sure all bread slices are covered in egg mixture. Cover and refrigerate overnight.

The next day Bake at 350 degrees for 1 hour.

Personal Notes:
This is another wonderful Christmas morning casserole. Make the night before and pop in the oven in the morning. Also makes a hearty breakfast for supper dish.
