Ingredients:
Ingredients:
2 c. flour
1/2 c. cocoa powder
2 tsp. baking powder
16 oz. semisweet chocolate, chopped
4 large eggs
2 tsp. vanilla
2 tsp. coffee grounds
10 tbsp. (1 1/4 sticks) salted butter, softened, but still firm
1 1/2 c. light brown sugar
1/2 c. granulated sugar
1 c. semi sweet chocolate chips

Directions:
Directions:
Combine flour, cocoa, and baking powder and set aside. Melt chocolate over a double boiler, stir until smooth and remove from heat. Beat eggs and vanilla lightly with a fork and sprinkle the coffee over top. Set aside.

In a bowl, cream the butter until smooth. Beat in sugars until combined. Reduce speed to low and gradually add in egg mixture until incorporated. Add the melted chocolate in a steady stream and beat until combined. With mixer at low speed, add flour mixture. Do no over mix. When incorporated, fold in the chocolate chips until combined. Cover bowl with plastic wrap and put it in the fridge for about 30 min (until the dough has a nice scoopable, fudgey consistency).

While dough is resting, adjust oven racks to upper and lower middle positions and heat oven to 350º. Line two cookie sheet with parchment or non stick baking spray. When dough is set and making sure to leave about 1 1/2 in. between each ball, scoop dough in about 1 3/4 in balls onto cookee sheet.

Bake cookies until edges have just begun to set, but centers are still very soft, about 10 min., turning cookie sheets from front to back and switching from top to bottom racks halfway through baking. Cool cookies on sheet about 10 min. and move to cooling rack until room temp.

Personal Notes:
Personal Notes:
These cookies are pretty ridiculously good. The dough is a great chocolaty, chewy consistency and the coffee adds that special surprise. There are a few extra steps with this recipe than your traditional cookie recipe, but they're worth it, trust me! Hope you enjoy them!
