Flour tortillas
1/4 cup peanut oil
1 cup chopped onion
4 cloves garlic, minced
2 medium pepper (jalapeņo, Anaheim or poblano)
8 cups chicken broth
1 can petite diced tomatoes
1 tsp kosher salt
2 cups chopped cooked chicken breast
avocado
sour cream
Monterey jack cheese

Directions:
Directions:
Cut tortillas into strips and fry in oil until light brown. Set aside.

Add onion to the oil and cook for 2 minutes Add pepper and cook for 2 to 3 minutes. Add garlic and cook for 30 seconds. Add broth, tomatoes, chicken and salt. Cook for 20 minutes. Serve in bowls and garnish with cheese, strips, sour cream and avocados.
