3 med. ripe bananas (1 cup mashed)
1-1/2 cups flour
1 cup sugar
6 T unsweetened cocoa
1 tsp baking soda
1/2 tsp salt
2 eggs
1/3 vegetable oil
1/2 cup chopped almonds

Directions:
Directions:
Preheat oven to 350º. Spray a 9 x 5- inch loaf pan with Pam. Mash bananas with fork, and measure to make 1 cup. In a large bowl, mix together dry ingredients. Make a well in the center of the dry ingredients. In a separate bowl, beat eggs, oil and mashed bananas. Pour into well in center of dry mix; mix just until moistened. Stir in almonds. Pour into loaf pan. Bake 55-60 minutes or until wooden toothpick in center comes out clean. Let stand in pan 10 mins, then turn onto wire rack to cool.

Makes 1 loaf, about 16 slices.

Note: Can be made in mini-loaf pans or as muffins. Adjust baking time.
