3 c. frozen Lima beans
1 lg. onion, diced
1 c. carrots, diced
1 can chicken broth
2 potatoes, peeled and diced
1 can tomato puree
2 tsp. salt
1 - 2 c. white meat chicken, cooked and diced
1 1/2 c. corn
1 tbsp. butter
2 tbsp. sugar
crushed red pepper

Directions:
Directions:
In a large stock pot, cook Lima beans, onion and carrots in chicken broth (add water if necessary to just cover the vegetables) until tender. Add potatoes, tomato puree, salt, and chicken. Cook until potatoes are done. Add butter, sugar, corn and a dash or two of crushed red pepper. Simmer until done.Add water as necessary to adjust consistency. Less water will make it more like stew; more water will make it more like soup.

This soup was part of almost every Sunday after church lunch I had at my Granny's house. Combined with her wonderful from scratch biscuits and fried chicken, it was a true taste of heaven on earth! Today I love it with a grilled cheese sandwich.
