3 medium onions chopped
2 lbs ground beef
¼ lb butter
1 tsp salt
½ tsp pepper
1 tbsp cinnamon
1 small can tomato sauce
½ glass water
1-1 ½ lb spaghetti (regular or thick spaghetti NOT THIN)
½ gallon of milk (can be skim)
2 cups grated Parmesan cheese
5 eggs

Step 1:
• Brown onions with ground beef
• Add salt and pepper, can of tomato sauce, cinnamon, and ½ glass of water
• Cook until it all comes together and there is no water left in the bottom of the skillet.
Step 2:
• Boil Spaghetti to al dente and set aside

Step 3: Making Béchamel Sauce Option 1 (This is a VERY delicate step…you can easily mess this up. We do it one of two ways and I prefer option 2 while mom prefers option 1)
• Bring ½ gallon of milk, 1 and ½ sticks of butter to boil
• Mix 2 cups of flour with cold milk until smooth (about ½-1 cup milk)
• Add flour mixture to hot milk and put heat on low, stirring constantly
• Add 2 cups grated cheese, 5 beaten eggs, and teaspoon of nutmeg
• Cook over low heat until thick.

Making Béchamel Sauce Option 2 (no eggs in sauce…go back to Step 2 and add the beaten eggs to cooked spaghetti)

• Bring ½ gallon of milk, 1 and ½ sticks of butter to boil
• Mix 2 cups of flour with cold milk until smooth (about ½-1 cup milk)
• Add flour mixture to hot milk and put heat on low, stirring constantly
• Add 2 cups grated cheese and teaspoon of nutmeg
• Cook over low heat until thick.

Step 4:
• Layer spaghetti, béchamel sauce, and meat in lasagna pan
• 1st layer spaghetti
• 2nd layer béchamel
• 3rd layer meat
• Repeat…you should have two layers of meat and end with béchamel on top.
• Sprinkle with nutmeg
• Cook in 350º F oven for 45 mins to 1 hour.

This is my all-time favorite meal, like on death row last meal level. This recipe is a classic Greek dish that when you make it for someone it’s because you love them very much and don’t mind the backbreaking steps. This is also my Mom’s favorite meal and she prefers it cold while I love to mash up my piece before eating. (Pro tip: This is one of those things that is even better the next day when it has had a chance to set up)
