1 cup all-purpose flour
1 cup blue cornmeal
1 Tbsp. baking powder
1/2 tsp. salt
2 Tbsp. sugar
1 egg
1/4 cup canola oil
1 cup milk
1/2 cup canned corn, drained
1/2 cup bell pepper, diced
1/4 cup green onion, diced

Preheat oven to 425ºF and lightly coat an 8 x 4 x 4 inch loaf pan with canola oil..

Stir together dry ingredients in a mixing bowl. Combine egg, canola oil and milk; add to dry ingredients. Mix until just blended; batter will be lumpy. Fold in corn, bell pepper and green onion.

Pour batter into loaf pan and bake for 25 minutes; surface will turn olden brown and may crack.

Allow to cool for at least 15 minutes. Use a knife to loosen loaf from pan's edges. Turn onto cutting board and slice. Serve warm or at room temperature in an airtight container.
