Pot roast cut with a layer of fat on one side
6 small Potatoes
6 whole Carrots
3 Onions

Directions:

Place Meat in a Dutch oven with fat side down. Peel potato and onions. Skin and cut in half onions. Place around meat. Sprinkle with salt pepper and garlic powder. Cover and bake for about 1.5 hours. Remove meat and vegetables and make a gravy from the meat drippings and crispies. Place on stove on medium heat until bubbly. Add olive oil to stretch if needed. Stir in flour until you have a creamy rue. Season if desired. Heat again until bubbly and dark brown but not burned. Add water or milk stirring constantly until fully mixed. Simmer until desired consistency.
