1 can black eye peas
1 can black beans
1 can petite diced tomatoes, drained
3 fresh medium jalapeņos, stemmed, seeded and minced
1 small red onion, diced
1/2 yellow bell pepper, stemmed, seeded and diced
1/4 cup fresh cilantro, chopped
6 tbs red wine vinegar
6 tbs olive oil
1/2 tsp salt
1/2 tsp ground black pepper
1/2 tsp garlic powder
1 tsp dried oregano
1 1/2 tsp ground cumin
8-12 oz zesty italian dressing
chopped green onion
1-2 tbs minced garlic

Directions:
Directions:
Mix all ingredients in a medium bowl; cover and refrigerate 2 hours or up to 2 days. Before serving, adjust seasonings to taste, adding extra vinegar, salt and pepper. Transfer to a serving bowl.
