1 c sugar
1 c brown sugar
1 c shortening
3 eggs
4 c flour
1 tsp baking soda
1 tsp vanilla
salt

Date Filling
1 # pitted dates cut fine
1/2 c water
1/2 c sugar

Directions:
Directions:
Mix together and boil until thick.

Cream Shortening. Add sugars and mix together until fluffy. Add eggs and vanilla. Stir in flour, baking soda, and salt. Roll out into rectangle 1/2 inch thick. Spread with the filling.

After spreading the date filling over the cookie dough, roll up like a jelly roll and refrigerate overnight. Cut into 1/2 inch slices and put on greased baking sheet. Bake at 375 for 6 - 8 minutes.

Minnie was a busy homemaker, gardener and other of two children (Eleanor and Elroy). She was active in her church and worked as a waitress when she and Elmer first moved from their farm northwest of town to Somonauk. In later years, Minnie worked in the Somonauk School Lunch program. These are the cookies she most enjoyed making.
