6 medium or large carrots
2 T butter
3 T honey
1 T fresh parsley

Directions:
Directions:
Wash and peel carrots; cut into bite sized pieces. Steam in a saucepan with a small amount of water. Drain. In a small pan, melt butter, then stir in honey and parsley. Pour over carrots and serve hot. Carrots may be cooked over hot coals; wrap well in 2 layers of heavy aluminum foil and bake until tender, about 45 minutes. Serves 4.

Another Utah recipe. Sanpete County is famous for its carrots. In years past, it was foundly known as "Carrot County" and citizens were called "Carrot Eaters."
