1 cup corn meal
2 cups milk, hot
1 teaspoon salt
1 teaspoon baking powder
2 tablespoons melted shortening or salad oil
1 cup milk, cold
3 well beaten egg yolks
3 stiffly beaten egg whites

Directions:
Directions:
Sift meal three times and add to 2 cups of hot milk, stirring constantly with a whisk until consistency of mush and free of lumps. Remove from heat; add salt, baking powder and shortening. Stir in 1 cup of cold milk. Add egg yolks and fold in beaten egg whites. Bake in greased 2 quart casserole dish in slow oven (325) 1 hour. Spoon into warm dishes; top with butter.

Once when Frances and Ross visited with our family, Frances decided to show Mother how to make one of her favorite suppers. We had a lot of leftover steak, so she make her "Baked Hash" and to go with it this wonderful "Spoon Bread." Mother copied the recipe and I found it in her files. Food does bring back good memories!
