Macaroons:
4 eggs whites
3/4 tsp vanilla extract
3/4 tsp almond extract
1/8 tsp cream of tarter
1 1/2 cups white sugar
1 cup all purpose flour
1/4 tsp salt
2 1/2 cups flaked coconut

Topping:
1 bag of white chocolate chips (or white candy melts)
2 T. milk or cream
confectioners sugar for dusting
Directions:
Directions:
Preheat oven to 300º.
Line a cookie sheet with preachment paper.
In a medium bowl or mixer, beat egg whites, vanilla, almond extract, and cream of tarter until soft peaks form.
Gradually beat in sugar and whip until stiff.
in a separate bowl, combine the flour, salt and coconut.
Fold into the egg whites.
Drop by heaping tablespoons onto cookie sheets, shaping each into a "Matterhorn Mountain".
Bake for 20-30 mins. (depending on size) until slightly golden.
Melt the white chocolate with milk over a double boiler and dip top of cooled cookie in chocolate.
Sprinkle with powdered sugar.

Macaroons with melted white chocolate in the shape of Matterhorn Mountain, from Jolly-Holly (Mary Poppins) Bakery at Disneyland are Sarah's favorite treat. This is recipe makes yummy cookies, but they do not reach the height needed to reach the beautiful, mountain cookies at Disneyland. For that you need pixie dust and unfortunately that still not available in reliable bottled form outside the park.
