2 cups of flour
3 tbsp. of baking powder
2 tbsp. sugar
1 tsp salt
1 egg
1 1/2 cups milk
3 tbsp. melted butter

Directions:
Directions:
Melt the butter in a saucepan. Mix the dry ingredients together and whisk to remove lumps and add air. Beat the egg in a bowl and then add milk. Add the melted butter to the milk mixture. Be careful to do it this way so as not to “cook” the egg in the warm butter. It is best to add the dry ingredients to the wet. This makes it easier to get a light batter.

Stir everything together. Don’t worry if there are small lumps. Spoon onto medium warm griddle.
