2-1/2 C sifted cake flour
3 tsp baking powder
1/4 tsp salt
4 eggs (separated)
3/4 c boiling water
1 tsp vanilla
Thin Glaze:
3 C powdered sugar
3 Tbsp oleo
4 Tbsp milk
1 tsp vanilla
1 lb Spanish peanuts (red skin), finely chopped (use food processor or blender)

Sift flour, baking powder and salt. Set aside. Beat whites until about stiff and sprinkle in 1/4 to 1/2 c of sugar. Beat until sugar is dissolved and whites are stiff. Set aside. Beat yolks with remaining sugar until light and lemon-colored. Gradually beat in boiling water. Add sifted, dry ingredients and blend well. Fold in beaten whites and vanilla. Spoon batter into lightly greased 15x10 jelly roll pan. Bake about 35 min at 350º. Cool in pan 5 minutes; turn out of pan. When cool cut into 48 pieces (1-1/4"x2-1/2" oblong pieces.) Lightly spread each piece with thin glaze and roll in peanuts (leave red skins on for color). Let stand on wire racks until dry enough to wrap or pack.
Thin Glaze: Heat milk, add oleo, vanilla and powdered sugar. Might need to make another batch to cover all of them. If it is too thick, add a bit more milk. They are harder to glaze if glaza is too thick.
