4 cups diced potatoes
1 tsp salt
1/8 tsp pepper
1 cup onion, minced
1/2 lb yellow cheese
2 cups medium white sauce
Paprika, for top

White Sauce:

2 T butter
2 T flour
1/4 tsp salt
1/8 tsp pepper
1 cup milk

Directions:
Directions:
Cook potatoes 10 minutes, with onions and salt in a small amount of boiling water. Drain and put in casserole dish. Make white sauce, add cheese and seasonings. Stir until cheese is melted. Pour over potatoes, sprinkle top with paprika. Bake 350 degree oven for 40 minutes.

White Sauce Prep: Melt butter in pan over low heat, add flour, stir until smooth, remove from heat and stir, in milk. Heat to boiling. Boil 1 minute.
