1 Cup Peanut Butter
1 Cup Sugar
1 Teaspoon Vanilla
1 Egg

Directions:

Preheat oven to 350º
Mix all ingredients.
Scoop on to parchment paper covered cookie sheet in small teaspoons.
Press criss cross with fork tines.
Sprinkle with coarse sea salt.
Bake for 8 - 10 minutes.
Cool for 2 minutes before removing from the cookie sheet to finish cooling.

I have had them sprinkled with cinnamon & sugar, but I like the salt the best. Crunchy peanut butter is the only kind to use in this recipe!
Might as well double the recipe, because they go fast!
