1/2 C shortening
2 1/4 C sifted cake flour
1 1/3 C sugar
3 tsp baking powder
1/2 tsp salt
1/4 C maraschino cherry juice
16 maraschino cherries, cut into 1/8ths
1/2 C milk
3-4 drops almond extract
4 unbeaten egg whites
1 pkg fluffy white frosting mix
1/2 C chopped walnuts or almonds

Directions:
Directions:
Stir shortening to soften. Sift in dry ingredients. Add cherry juice, cherries, milk and almond extract; mix till all flour is dampened. Beat vigorously for 2 minutes. Add egg whites; beat vigorously 2 minutes longer. Fold in nuts. Bake in 2 paper-lined 8x1 1/2" round cake pans in moderate oven (350) for 30-35 minutes. Cool.
Prepare frosting mix according to package directions. Put cooled layers together with frosting; frost top and sides.
