2/3 cup butter or margarine, softened
2/3 cup packed brown sugar
1 egg
1 tsp. vanilla
2 - 1/2 cups all-purpose flour
1 tsp. baking soda
1 (12 oz.) package vanilla baking chips or white chocolate bar, chopped
1 - 1/2 cups coarsely chopped salted cashews
1/3 cup semisweet chocolate chips, melted (optional)

Preheat oven to 325 degrees.


In large bowl, cream butter and sugar. Stir in egg and vanilla; mix until well blended. Stir in flour and soda. Add 1 - 1/2 cups (9 oz.) vanilla chips and 1 cup cashews; mix well. Shape dough into 2-inch balls. Place 2 inches apart on ungreased cookie sheet; flatten slightly.


Bake 15 to 18 minutes or until golden brown. Cool 10 minutes; remove to wire cooling racks. Cool completely.


Melt remaining 1/2 cup (3 oz.) vanilla chips. Dip in an edge of each cookie and decorate with remaining chopped cashews. If desired, drizzle with melted chocolate.
