1 lb. ground chicken
1 tsp. cumin
1 tbsp. chili powder
1 tsp. salt
1 tsp. pepper
1 can black beans (15 oz./rinsed and drained)
1 can diced tomatoes (15 oz./undrained)
1 can whole kernel corn (11 oz./drained)
1 can enchilada sauce (10 oz.)
2 green onion - chopped
1 jalapeno - seeded and chopped
1/2 cup fresh cilantro - minced
1 package corn bread/muffin mix (Jiffy or Glory)
2 eggs - lightly beaten
1 cup shredded cheese - quesadilla or Mexican mix

1. Cook chicken in a large skillet over medium heat until no longer pink and break into crumbles.
2. Stir in seasonings.
3. Transfer to a slow cooker. Stir in beans, tomatoes, corn, enchilada sauce, green onions, jalapeno and cilantro.
4. Cook on low (covered) 6-8 hours until heated through.
5. In a small bowl combine muffin mix and eggs and spoon over chicken mixture.
6. Cook on low (covered) on low 1 to 1/2 hours longer or until a toothpick comes out clean.
7. Sprinkle with cheese and let stand for 5 minutes.
8. Serve with sour cream, salsa and fresh cilantro.
