1 lb. pasta of your choice
3 tbsp. olive oil
1 cap apple cider vinegar
3 c. cherry tomatoes, quartered (1 1/2 pt.)
1 stalk of celery
1 tsp. salt
1/2 tsp. pepper
1/2 c. torn basil leaves
8 oz. fresh mozzarella, diced (about 1 1/4 c.)

Directions:

1. Bring a large pot of water to boil over high heat.
2. Add pasta and cook until tender, but still firm to bite.
3. Stir occasionally for 8 to 10 minutes.
4. Drain pasta into large bowl.
5. Heat olive oil in skillet over medium heat.
6. Add salt and pepper.
7. Add mixture to the pasta.
8. Add diced tomatoes and celery.
9. Toss to combine.
10. Add basil leaves, mozzarella and vinegar.
11. Stir to combine.
