Ingredients: 1 cup chopped sweet onion 1 cup chopped celery 3 large cloves fresh garlic chopped 1/2 cup virgin organic coconut oil 1 tablespoon fresh squeezed lemon juice 3 cups unsweetened unflavored almond or coconut milk 1 32 ounce carton vegetable or organic chicken stock 1 1/3 cup flour 3 tablespoons curry 1/2 teaspoon cumin 1/2 teaspoon cloves 1/2 teaspoon fennel seed 1/2 teaspoon turmeric 1/2 teaspoon coriander 1/2 teaspoon ginger 1 teaspoon salt 1 tablespoon honey, agave syrup or coconut sugar 1/2 teaspoon mace (optional) 1/2 teaspoon cardamom (optional)
Meats of Your Choice: 1 pound raw peeled deveined wild caught shrimp (can be frozen) 2 cans (6 1/2 ounces) crabmeat 1 package of wild caught scallops 1 pound of organic cooked chicken, cut into bite sized pieces
Serve with small bowls of: chopped green onion peanuts slivered almonds organic coconut organic dried cranberries or raisins chutney
Serve over brown or white rice

Directions:1. In a large cast iron or stainless steel skillet, sauté onions, garlic and celery in coconut oil until tender.
2. Stir in spices and flour to make a paste.
3. Transfer mixture to a large stainless steel pot. Add broth, milk, and lemon juice. Bring to simmer, stirring frequently.
4. Add meats of your choice. Heat to a simmer for a few minutes.
5. Serve over rice with assorted toppings. |
