1 white from a large egg
Peppermint extract
3 cups plus a pinch of powdered sugar
Food Color (optional)

1. Whisk egg whites in bowl until stiff peaks form. Add a few drops of peppermint extract and 3 cups of sugar. (Add food coloring if you like.) Mix until stiff as paste.

2. Dust work surface, hands and rolling pin with powdered sugar and roll out paste 1/8- inch thick.

3. Cut out shapes with cookie cutters and lay on baking sheet. Refrigerate 3-4 hrs. to set. Can be made up to 3 days ahead of party. Makes 40.
