Ingredients:  
• 1( 8) oz pitted dates, snipped.(I use the sweetened chopped ones)
• ½ cup flaked coconut
• ½ cup sugar
• 4 Tbsp butter
• 1 egg slightly beaten
• Dash salt
• 1 ½ cups crisp rice cereal (like Rice Krispies)
• ½ cup chopped walnuts
• 1 tsp vanilla
• Red sugar crystals

Directions:

In skillet combine dates, coconut, sugar, butter, egg and salt.
Cook and stir over med-low heat till mixture thickens and bubbles….5 to 10 minutes.
Remove from heat and stir in rice cereal, walnuts and vanilla.
Cool 10 minutes.
For each cookie use about 1 Tbsp date mixture and form into a strawberry or Christmas ball shape.
Roll cookie in red sugar sprinkles for strawberries or any sugar color for Christmas balls.

I got this recipe from an old friend of my Mother's. These cookies melt in your mouth and are beautiful at Christmas. One of Amanda's favorites.
