Ingredients: 2 c sifted flour 2 c sugar 1 tbsp cocoa 1 tsp salt 1 tsp baking soda 2 eggs 1 1/2 c vegetable oil 1 c butter milk 1 tsp vanilla 2 oz red food coloring 1 tbsp vinegar
Icing: 1 8 oz cream cheese 1/2 c butter 1 tsp vanilla 2 c icing sugar

Directions:Lightly stir in eggs in a medium size bowl with a whisk. Add remaining liquid ingredients and stir together with whisk until blended. Place all dry ingredients in a bowl. Add wet ingredients into the dry mixture and mix on high until combined.
Grease two 8" round cake pans. Line the bottom of the pans with wax paper and grease again. Pour the batter into both prepared pans and bang on counter to remove air bubbles. Bake in a preheated 350º oven for 30 minutes or until tester inserted in centre comes out clean.
Icing: Cream butter and cream cheese until smooth, add vanilla. Add icing sugar and beat until smooth.
To assemble, place one layer of cake on a serving plate. Spoon some of the icing and spread. Top with the other layer and ice the rest of the cake. |
