2-1/2 pounds russet potatoes
5 heaping tablespoons sweet pickle relish
3 tablespoons pickle juice
1/3 cup mayonnaise
1/3 cup yellow mustard
3 hard boiled eggs finely diced
Salt and pepper

Directions:
Directions:
Peel and cut up potatoes in small cubes. Boil potatoes in salted water 10 to12 minutes, or until just tender. Drain the potatoes and mash as you would mash potatoes. Then combine relish, mayonnaise, mustard and chopped boiled eggs. Mix well,stir in salt and pepper to taste.
Serves 8

My mother made this every Sunday for lunch and it was always gone in a hurry. Add more pickle relish it you need to. This recipe is dedicated to all my family and especially to my sister and brother-in-law Frances Roland and Eddie Roland. This recipe is unique as the potatoes are mashed not cubed like most potato salad. This is best served warm.
