1/2 c margarine (softened)
1 c flour
2 Tbsp water
1/2 c margarine
1 c water
1 tsp almond extract
1 c flour
3 eggs
1-1/2 c confectioners' sugar
2 Tbsp margarine, softened
1-1/2 tsp vanilla
1 to 2 Tbsp warm water

Cut margarine into flour. Sprinkle water over and mix. Round into ball; divide in half. On ungreased baking sheet, pat each half into 12" x 3" strip. Strips should be about 3 inches apart on sheet.
Heat margarine and water to rolling boil in medium saucepan. Remove from heat and quickly stir in extract and flour. Stir vigorously over low heat until mixture forms a ball, about 1 minute. Remove from heat. Beat in eggs (one at a time) until smooth and glossy. Divide in half; spread each half evenly over strips. Bake at 350º 50 min. or until topping is crisp and brown. Cool. (Topping will shrink and fall, forming a custardly top.) Mix sugar, margarine, vanilla and water until smooth and of spreading consistency. Frost puffs and sprinkle generously with nuts.

Grandma taught me how to make these and I took them to the Plymouth County Fair when I was a Junior in High School. Blue ribbon--thanks, Grandma!! I found some of the comments I made in my 4H submission article entertaining and insightful: My Grandma Preston makes this Danish Puff, and I have always really liked it. My mom never has time to bake anything as elaborate as this. When we made the puff at grandma’s house, she didn't have any margarine with a high percentage of oil. The crust was tough, and she gave me the tip that the next time I make this, to use a margarine using at least 70% of oil. I did this, and it certainly did turn out better!
