2 C. Yellow Eyes Beans
1 tsp. Baking Soda
1/2 lb. Salt Pork
4 T. Molasses
1 tsp. Dry Mustard
1 tsp. Salt
8 tsp. Sugar
Diced onion, optional
Cooked Bacon, optional

Directions:
Directions:
1.Soak beans overnight. Par boil beans for one hour - until skin breaks when you blow upon it.
2.Change water, add baking soda, then put back on burner to boil about 1 to 2 hours.
3. Put in onion (if using) in bottom of oven safe baking dish, cover with beans.
4. Add remaining ingredients and cover with water, if using bacon place on top.
5. Cook and bake slowly at 250-300 degrees for 6 to 8 hours. If beans get dry while cooking add water.
