3 1/4 c flour
1 1/2 c granulated sugar
1 tsp salt
4 tsp baking powder
1 tsp baking soda
1 rind of whole lemon, minced
2 large eggs
2 c buttermilk
1/2 c vegetable oil
2 c frozen blueberries toss in bit of flour to separate
1/2 c pecans, chopped
granulated sugar

Line muffin tins with paper cups and spray with vegetable oil. Sift together flour, sugar, salt, baking powder and baking soda into a large bowl. Add lemon rind and pecans. Set aside.

In separate bowl, whisk eggs, buttermilk and oil until combined. Add this wet mixture to the flour mixture and stir until the batter is just combined. Gently fold in blueberries and distribute as evenly as possible. It is essential that you do hot stir the batter too much or the muffins will be tough.

Spoon batter into muffin cups, filling each cup to the brim. Sprinkle each muffin with 1/4 to 1/2 tsp granulated sugar. Bake in a preheated oven at 350 degrees for 23 to 25 minutes or until brown. Cool in muffin pan for 10 minutes, then remove muffins from pan and finish cooling on wire rack.

Note: only use frozen blueberries.
