2 cups sugar
1 cup oil
4 eggs
2 cups flour
1 1/2 t. baking soda
1 t. salt
2 t. cinnamon
2 cups grated carrots (loosely packed)
1 small can crushed pineapple, drained
1 cup chopped pecans

Icing:
8 oz. pkg. cream cheese softened
1 stick butter, softened
2 t. vanilla
1 lb. powdered sugar
1 cup chopped pecans

Directions:
Directions:
Cream together sugar and oil. Add eggs. Add dry ingredients gradually. Stir in carrots, pineapple and pecans. Pour into 3 greased and floured cake pans. Bake @ 350º for 30-35 minutes, until set. Cool 10 minutes, then remove from pans and cool completely.

For frosting, mix together cream cheese, butter and vanilla. Slowly add powdered sugar. Add pecans.

Frost cooled cake.
