Some lobster, split and cleaned, meat chopped
8 T butter
3 T butter for brushing
1 medium onion, chopped
a little tarragon
optional chopped shrimp, crab, scallops
some salt and pepper
1 pack (4 oz.) Ritz crackers, crushed into crumbs

Directions:
Directions:
Preheat oven to 425 degrees. Sauté onion in 8 T butter until soft but not brown. Stir in tarragon. If using raw shrimp or scallops, add and sauté. Let cool and add Ritz cracker crumbs. Stuff lobster or shrimp and bake until done, about 12 to 15 minutes for large shrimp or 17 to 24 minutes for 1 ˝ pound to 2 pound lobsters.

This a great recipe and Dan has made it many times. It makes the lobster very easy to eat. But it is some trouble for the cook, and it's not for the squeamish! You have to split the live lobsters down middle, starting with a heavy knife at the carapace right behind the eyes. Then you clean out the insides and rinse them. Then cut out the lobster meat and coarsely chop.
