2 lbs. Lean Ground Beef
1 Onion, chopped
1 Garlic clove, minced
2 tbsp. Chili powder
3 c. Tomato sauce
1 tsp. Sugar
1 tsp. Salt
1/2 c. Black olives, sliced
2-4 oz. cans Green chilies, chopped
Sliced Jalapeno pepper (optional)
2 c. Ricotta cheese
1 Egg, beaten
2 c. Monterrey Jack cheese, grated
12 Soft corn tortillas or Lasagna noodles
1 cup Cheddar cheese, grated

Toppings:
Chopped green onions, sour cream, and salsa.

Directions:
Directions:
Brown meat and drain. Add onions and garlic; saute until soft. Sprinkle with chili and mix well. Add tomato sauce, sugar, salt, olives, chilies and jalapeno. Simmer 15 minutes. Beat Ricotta and egg together. Set aside. In a 9”x13” pan, layer 1/3 meat mixture, ½ the Monterrey Jack cheese, ½ the Ricotta followed by ½ the tortillas; repeat process ending with meat sauce on top. Sprinkle with Cheddar cheese. Bake at 350ºF for 30 minutes. Serve toppings at table in individual bowls.
