1 medium onion chopped
2 cloves garlic minced
7 oz. can diced green chiles
2 cups shelled black-eyed peas
3 large tomatoes peeled, cored and chopped
1 chipotle chili in adobo sauce or 2 fresh jalapeno chiles
2 T oil
1 tsp. ground cumin
1/2 cup brown rice
3 cups chicken broth

Directions:
Directions:
In saucepan cook onion and garlic in oil, stirring often until onion is limp. Add cumin and stir l minute. Add chiles, rice, peas and broth. Bring to boil, cover and simmer 25 minutes. Add tomatoes and their juices. Continue to simmer, covered until rice is tender--`10 minutes more. Remove whole chiles. Season with pepper.
