1c. WHITE SUGAR

1 c.packed BROWN SUGAR

2 EGGS

1 teaspoon vanilla extract

2 c ALL PURPOSE FLOUR

1 teaspoons BAKING SODA

1 teaspoon SALT

1 1/2 teaspoons GROUND CINNAMON

3 c QUICK COOKING OATS

In a medium bowl, cream together butter, white sugar, and brown sugar. beat in eggs one at a time, then stir in vanilla. combine flour, baking soda, salt, and cinnamon; stir into creamed mixture, Mix in oats cover and chill dough for at least 1 hour.
preheat oven to 375 F grease cookie sheets. roll dough into walnuts size balls and place 2 inches apart on cookie sheets flatten each cookie with a large fork dipped in sugar

No need to chill this dough its fine at room temp. we didn't roll into balls or flatten; we just scooped and baked and they came out perfect. The timing here was just right for soft cookies, but if you like em crisp. bake them 2 to4 minutes longer they're great either way.
