Vegetables of your choice
cooking spray
salt
pepper

You can use any leftover veggies you have in your fridge!
I used Yellow squash, Zucchini, Diced peppers, Asparagus, Red onion, French Green beans and Grape tomatoes!
Spray baking sheet with cooking spray.
Arrange vegetables in a single layer.
Sprinkle with salt and pepper.
Spray veggies with cooking spray and toss.
Roast for 20-25 minutes at 350º.
