2 tsp Olive Oil
2 tsp butter or margarine
2 tbsp chopped onion
1 bay leaf
1 cup long grained rice
2 cups chicken stock

Directions:
Directions:
Make 2 cups of chicken stock and set aside.

Heat oil and butter in pot; add onion and sauté for approximately 1 minute. Add rice and bay leaf. Stir rice for about 1 minute until it is fully coated and starts to slightly brown. Add chicken stock and bring to a boil. Turn down to a simmer; cover and cook for 20 minutes.
